Spray your steaks with duck fat and then seasoned the steak with Salt, Pepper & Paprika
I set my charcoal kettle up for indirect at 300 degrees. Once the temp hits, I placed my ribeyes on the opposite side of the flame.
My cast iron went directly over the flame so I can create my onion cheese sauce. Once the pan got hot enough I put butter & onion in and cook for about 8 mins.
I then added heavy cream, Worcestershire sauce & crushed peppercorns. I stirred for 3-4 mins and then removed it from direct heat.
When removed I transferred my steaks over the direct flame for the final sear, 2 mins each side!
The cast iron then goes on the indirect side of the grill and I added my shredded flagship cheddar cheese! Stirred in for a few mins and pulled my steaks to rest for 15 mins.
