Asian Rib Sandwich

Ingredients
  

  • 2 Sets of spare ribs

Asian Inspired Marinade

  • ½ cup Soy Sauce
  • ¾ cup Honey
  • ¾ cup Hoisin sauce
  • 2 tbsp Mirin
  • 2 tbsp Sesame seed oil
  • ½ cup Sweet chili sauce
  • 4 tbsp Brown Sugar
  • 1 tbsp Korean chili powder

Asian Inspired BBQ Sauce

  • ½ cup Hoisin sauce
  • 2 tbsp Molasses
  • 2 tbsp White cooking wine
  • 2 tbsp Oyster sauce
  • ¼ cup Honey
  • ¼ Sweet chili sauce
  • 2 tbsp Sriracha
  • 3 cloves Garlic minced
  • 3 tbsp Brown Sugar
  • 1 inch Ginger grated
  • 1 tbsp Korean chili powder

Instructions
 

  • Prep your spare ribs by removing the excess meat/fat. Follow that by removing the membrane off the backside of the ribs. Season with coarse kosher salt and coarse black pepper on all sides of the spare ribs. Place them in a larger mixing pan, I used an aluminum foil pan that had 3 inches of depth.
  • At this time add all of your marinade ingredients into a mixing bowl (Soy sauce, honey, hoisin sauce, mirin, sesame seed oil, sweet chili sauce, brown sugar and Korean chili powder) and stir or whisk together. Pour all of the marinades into the aluminum pan with the ribs and toss the ribs around to make sure they are covered. Wrap with aluminum foil and place in the fridge for 12-24 hours.
  • The next day set your ribs out and pat them dry with paper towels. Set your smoker up for 250 degrees and then add some applewood chunks for smoking. Place your ribs on (Bone side down) and smoke for 3 hours. Make sure you spritz after the first hour, every 45 mins with apple cider vinegar. 
  • After the 3 hour mark, have a large strip of aluminum foil ready with 3-4 pads of unsalted butter on the bottom topped with honey and brown sugar. Now place your ribs on top of this mixture, BONE SIDE UP, and wrap them with foil so that there are no openings. Place them back on the smoker for 1-2 hours, make sure you poke them and test for probe tender meat. You want them to be super soft so the bones will pull away gently without any resistance. 
  • During the last 30 mins of your ribs being on the smoker start to make your Asian BBQ Sauce by having a saucepan over medium heat and adding the ingredients in (Hoisin sauce, molasses, cooking wine, oyster sauce, honey, sweet chili sauce, sriracha, garlic, brown sugar, ginger and Korean chili powder) stir and simmer for 4-6 mins and then let cool. You can glaze your ribs or pull the ribs off when they are super tender and remove the bones. 
  • At this time cut into your bread (you can use Ciabatta bread or French loaf bread) and toast over direct heat.
  • Time to build your MrRib by adding a layer of the Asian BBQ Sauce, Dill Pickles, the Ribs and topped with thinly sliced red onions.
  • It is complete and ABSOLUTELY MONEY!
