Prepare the Sauce:
- Mix all sauce ingredients in a bowl. Refrigerate while preparing the burgers.
Cook Bacon & Veggies:
- Cook bacon on a griddle until crispy. Remove and sauté jalapeños and onions in the bacon fat until softened. Set aside.
Form & Season Patties:
- Divide ground beef into 6 loose balls. Lightly season with salt and pepper.
Smash & Cook Burgers:
- Heat griddle to medium-high. Place beef balls on the griddle and press down firmly with a spatula. Cook 2-3 minutes, then flip and cook for 1-2 minutes. Melt cheese on top.
Toast Buns:
- Butter brioche buns and toast on the griddle until golden.
Assemble Burgers:
- Spread sauce on the bottom bun, add a cheese-covered patty, then top with bacon, sautéed jalapeños, and onions. Place the top bun.
Serve & Enjoy:
- Serve immediately with fries, onion rings, or a fresh salad.
