Bacon Jalapeño Smash Burger

Crispy, juicy smash burgers with smoky bacon, spicy jalapeños, melty pepper jack cheese, and a creamy burger sauce. Cooked on a griddle and served on toasted brioche buns.

Ingredients
  

For the Burgers:
  • 2 lb ground beef 80% lean
  • Salt and pepper to taste
  • 1 red onion thinly sliced
  • 6 brioche burger buns
For the Toppings:
  • 8 slices of bacon
  • 1-2 fresh jalapeños thinly sliced
  • 12 slices pepper jack cheese
  • For the Smash Burger Sauce:
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp pickle relish optional
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp hot sauce optional
  • Salt and pepper to taste

Method
 

Prepare the Sauce:
  1. Mix all sauce ingredients in a bowl. Refrigerate while preparing the burgers.
Cook Bacon & Veggies:
  1. Cook bacon on a griddle until crispy. Remove and sauté jalapeños and onions in the bacon fat until softened. Set aside.
Form & Season Patties:
  1. Divide ground beef into 6 loose balls. Lightly season with salt and pepper.
Smash & Cook Burgers:
  1. Heat griddle to medium-high. Place beef balls on the griddle and press down firmly with a spatula. Cook 2-3 minutes, then flip and cook for 1-2 minutes. Melt cheese on top.
Toast Buns:
  1. Butter brioche buns and toast on the griddle until golden.
Assemble Burgers:
  1. Spread sauce on the bottom bun, add a cheese-covered patty, then top with bacon, sautéed jalapeños, and onions. Place the top bun.
Serve & Enjoy:
  1. Serve immediately with fries, onion rings, or a fresh salad.
