Buffalo Chicken Pizza

Ingredients
  

Chicken:

  • 6-8 chicken thighs trimmed
  • Avocado oil for binder
  • 1 tablespoon Kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper

Cheeses and Herbs:

  • 1/2 cup shredded sharp cheese
  • 1 1/2 cups blue cheese plus additional for topping
  • 3 tablespoons chives chopped

Blue Cheese Sauce:

  • 1 cup heavy cream
  • 3 tablespoons mayonnaise
  • 1 cup blue cheese crumbles
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Additional:

  • 1 frozen cheese pizza brand of choice, e.g., Home Run Inn
  • Buffalo sauce quantity as needed

Instructions
 

  • Trim 6-8 chicken thighs and coat lightly with avocado oil.
  • Mix and apply seasoning: 1 tablespoon Kosher salt, 2 teaspoons black pepper, 1 teaspoon each of onion powder, garlic powder, and cayenne pepper.
  • Refrigerate seasoned chicken until ready to grill.
  • Prepare cheeses: Measure 1/2 cup shredded sharp cheese and 1 1/2 cups blue cheese.
  • Chop 3 tablespoons of fresh chives.
  • Make Blue Cheese Sauce: Combine 1 cup heavy cream, 3 tablespoons mayonnaise, 1 cup blue cheese crumbles, 1 tablespoon Worcestershire sauce, and 1 teaspoon each of salt, pepper, garlic powder, and onion powder in a saucepan. Simmer for 6-8 minutes, then cool.
  • Cook frozen cheese pizza (Home Run Inn or similar) as per box instructions.
  • Grill chicken thighs, flipping every 60-90 seconds and basting with buffalo sauce. Cook to 170°F internal temperature, then chop into chunks and toss with buffalo sauce.
  • 8-10 minutes before pizza is done, add sharp cheddar cheese on top and let melt.
  • Assemble pizza: Add grilled buffalo chicken, drizzle with blue cheese sauce, sprinkle blue cheese crumbles, and garnish with chopped chives.
  • Pre-cut the pizza before adding toppings, serve, and enjoy.
