Ingredients
  

FOR THE LOBSTER TAILS:

  • 4 lobster tails 5-6 oz each
  • Fresh cilantro and lime wedges for garnish

FOR THE CHIPOTLE HONEY BUTTER:

  • 3 tablespoons unsalted butter melted
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce minced
  • 1 teaspoon adobo sauce from the can
  • 2 garlic cloves minced
  • 1 tablespoon fresh lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon cracked black pepper

Instructions
 

  • Cut lobster shells lengthwise and butterfly the meat, resting it on top of shells.
  • Make chipotle honey butter by whisking together all glaze ingredients. Reserve 1/3 for basting.
  • Preheat grill to medium-high heat (375-400°F) and oil the grates.
  • Brush lobster meat generously with 2/3 of the chipotle honey butter mixture.
  • Grill shell-side down for 5-7 minutes, basting occasionally, until internal temp reaches 140-145°F.
  • Flip meat-side down for final 1 minute to caramelize the glaze.
  • Rest 2-3 minutes, then garnish with cilantro and lime wedges before serving.

Notes

- Don't overcook - lobster should reach 140-145°F internal temperature
- Chipotle peppers can be adjusted to taste for heat level
- Can be made on gas or charcoal grill
- Pairs well with grilled corn and summer salads
