Cowboy Butter Steak Bites

Ingredients
  

  • 1-2 NY Strip Steaks cubed 1" thick
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon garlic powder
  • Optional 2 teaspoons chili powder
  • 1-2 tablespoons avocado oil
  • 2 russet potatoes peeled and cubed into 1/4" pieces
  • 1 white onion diced
  • 1 block unsalted butter softened
  • 3-4 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon fresh chopped parsley
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh rosemary
  • 1 lemon juiced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes

Method
 

  1. . Cut NY Strip steaks into 1" thick cubes. Season with salt, pepper, garlic powder, and optionally, chili powder. Add avocado oil and mix well. Place in the fridge to marinate for at least 30 minutes.
  2. Peel and cube russet potatoes into 1/4" pieces. Soak in ice water for 25 minutes. Drain and dry thoroughly with paper towels.
  3. Combine softened butter, minced garlic, Dijon mustard, hot sauce, chopped parsley, fresh thyme, fresh rosemary, lemon juice, kosher salt, black pepper, and red pepper flakes in a bowl. Mix well to create the cowboy butter compound butter. Place in the fridge to firm up.
  4. Heat a skillet over high heat and add avocado oil. Add steak bites and cook for 90 seconds without moving. Toss or turn each cube, cook for an additional 2 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add avocado oil, diced potatoes, and onions. Season with rub and toss. Cook until potatoes are crispy and onions are caramelized, about 8-10 minutes.
  6. Add 1-2 tablespoons of cowboy butter compound butter to the skillet. Stir until melted and coats the potatoes and onions. Add steak bites back into the skillet and toss to combine. Let rest for 3-5 minutes before serving.
