These spicy garlic parmesan wings combine the perfect balance of savory and spicy flavors using Melinda's Garlic Parmesan and Sriracha sauces. Grilled using a two-zone technique for crispy skin and juicy meat, these wings are perfect for game day, BBQs, or any casual gathering where bold flavors are appreciated.

Ingredients

  • - 2.5 lbs chicken wings separated into flats and drums
  • - 1 tablespoon olive oil
  • - 1½ teaspoons kosher salt
  • - 1 teaspoon black pepper
  • - 1 teaspoon garlic powder
  • - ½ teaspoon smoked paprika
  • - 2 tablespoons Melinda's Spicy Garlic Parmesan
  • - 1 tablespoon Melinda's Sriracha
  • - 1 tablespoon honey
  • - 1 tablespoon unsalted butter melted
  • - 1 teaspoon soy sauce
  • - Optional: squeeze of fresh lime juice
  • - 2 tablespoons fresh parsley chopped
  • - Extra grated Parmesan cheese
  • - Ranch or blue cheese for serving

Instructions

  • Pat wings dry and toss with oil and seasonings. Marinate 1-4 hours if time allows.
  • Set up two-zone grill with direct heat (400-425°F) and indirect heat zones. Oil grates well.
  • Grill wings over direct heat 10-12 minutes per side until internal temperature reaches 175-190°F.
  • Mix Melinda's Spicy Garlic Parmesan, sriracha, honey, melted butter, and soy sauce in a large bowl. Add optional lime juice for brightness.
  • Toss hot wings with sauce immediately after grilling. Let rest 2-3 minutes.
  • Garnish with parsley and extra Parmesan. Serve with dipping sauces and celery sticks.

Notes

- Pat wings completely dry for crispiest skin
- Add 1 tsp baking powder before seasoning for extra crispiness
- Adjust sriracha amount based on heat preference
- Internal temperature of 180-190°F provides optimal tenderness
