Place 2 tablespoons filling in center of each wrapper, fold corners, and roll tightly, sealing with beaten egg
Heat oil to 350°F in deep pot or fryer
Fry egg rolls in batches for 2-3 minutes per side until golden brown and crispy
Drain on paper towels
Warm honey with sliced jalapeño for 5 minutes, then drizzle over hot egg rolls
Serve immediately with ranch or BBQ sauce for dipping
