Ingredients
  

Braising Sauce Ingredients
  • 6 guajillo chilies
  • 2 Ancho Chilies
  • 3 Dried Arbol Chilies
  • 1 large white onion
  • 1 1/2 cup crushed tomatoes
  • 2 cups water
  • 6-8 cloves garlic
  • 2 cups beef broth
  • 1/4 cup apple cider vinegar
Herb and Spice Bag
  • 2 teaspoons peppercorns
  • 2 teaspoons All Spice Berries
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 teaspoon dried oregano
Beef Used for This Recipe And Other Ingredients
  • 3 pounds Chuck Roast
  • Flour tortillas
  • 1 pack Oaxaca cheese
  • Diced white onion garnish
  • Chopped cilantro garnish
  • Lime garnish

Method
 

Preparing the Braising Sauce
  1. Season the beef and let it sit.
  2. Combine the braising sauce ingredients in a pot.
  3. Bring to a boil and let simmer for 15 minutes.
  4. Transfer the sauce and a cup of the boiling water to a food processor.
  5. Add beef broth to the processor.
  6. Blend until smooth.
Cooking the Beef
  1. Sear the chuck roast in a hot skillet.
  2. Add water to the skillet to deglaze it.
  3. Add the prepared braising sauce to the skillet.
  4. Place herbs and spices in a cheesecloth, tie securely, and add to the braising sauce.
  5. Add the beef to the sauce and braise for 3 hours, or until it is tender and can be shredded.
Preparing the Tacos
  1. Remove the beef, shred it, and mix with a cup of the sauce.
  2. Dip a tortilla into the sauce and place it in a hot skillet.
  3. Toast the tortilla, flip it, and then add Oaxaca cheese and shredded beef.
  4. Fold the tortilla to form a taco and continue to fry.
  5. Flip the taco after a few minutes and then remove it from the skillet.
Garnishing and Serving
  1. Garnish the taco with onion, cilantro, and lime juice.
  2. Dunk the taco into consumè.
  3. Enjoy your delicious taco!
