Instructions
Griddle the Bacon, Vegetables & Beef
Crisp the Bacon and Cook the Vegetables. Cook the diced bacon on the griddle over medium heat until browned and crisp. Remove the bacon and set aside, leaving the rendered bacon grease on the griddle. Add the diced onion and jalapeños and cook until softened with some browning around the edges. Move the vegetables to the cool side of the griddle.
Brown the Beef. Add the 80/20 ground chuck to the medium-high side of the griddle and leave it untouched for 3-4 minutes to develop a browned crust. Flip and cook for another 2-3 minutes, then chop into small crumbles and season with Tony's Creole Seasoning. Mix in the cooked onions and jalapeños, then move everything to the cool side of the griddle to stay warm.
Fry the Fries
Heat the frying oil to 350°F. Fry the frozen fries in small batches for about 8 minutes, or until golden, crisp, and beginning to float. Do not overcrowd the oil. Transfer the hot fries to a large mixing bowl and immediately season with kosher salt.
Assemble & Finish
Assemble the Loaded Fries. Spread the crispy fries across an oven-safe sheet pan or serving dish. Spoon the warm queso over the fries, then add the ground beef mixture and freshly shredded sharp cheddar. Spread the toppings evenly across the fries. Transfer to a 400°F oven.
Melt the Cheese and Finish
Bake for 6-8 minutes, or until the cheddar is completely melted, the queso is hot, and everything is heated through. Remove from the oven and top with the reserved crispy bacon and fresh diced jalapeños. Serve immediately while the fries are still crisp and the cheese is hot.

Notes
Fry the frozen fries in small batches to prevent the oil temperatures from dropping.
Keep the cooked beef and vegetables on the cool side of the griddle while the fries cook.
For the best texture, assemble the loaded fries just before the oven finish and serve immediately.
