Brisket Jalapeno Poppers-Texas Twinkies

These Brisket Jalapeño Poppers, also known as Texas Twinkies, are stuffed with a creamy mixture of smoked brisket, sharp cheddar, cream cheese, and scallions.

Ingredients
  

  • 1 lb Chopped brisket
  • 10-12 Good sized jalapeños
  • 1-2 lbs Bacon
  • 2 blocks Softened cream cheese
  • 8 oz Shredded sharp cheddar cheese
  • cup Chopped scallions

Instructions
 

  • Start off by smoking your brisket
  • and chopping a pound of it for the jalapeño poppers.
  • In a medium-sized mixing bowl add two blocks of softened cream cheese, sharp cheddar cheese, scallions and the chopped brisket. Mix by hand until it’s combined nicely. Place it to the side.
  • Cut your jalapeños in half and remove the seeds and veins. Take a tablespoon of the brisket cream cheese mixture and fill the creator of the jalapeño. Now wrap it tightly with the bacon.
  • Fire up the smoker to 325 degrees and place the Texas Twinkies on the smoker.
  • Smoker for 1 hour, or until the bacon tightens up and gets crisp. You can glaze them with your favorite bbq sauce or eat them as is.
  • Remove and let them cool for 10-15 minutes.
  • Enjoy with friends and family!
