Juicy grilled filet mignon is seared over hot coals, butter-basted, and served with rich chunky mashed potatoes loaded with roasted garlic, shallots, sour cream, chives, and Asiago cheese.
Lightly coat the filet mignon steaks with canola oil. Season the tops, bottoms, and sides generously with kosher salt. Set aside.
Peel the potatoes and cut them into cubes. Bring a pot of salted water to a boil, add the potatoes, and boil for about 8 minutes, or until tender enough to easily pierce with a toothpick.
Prepare the grill with direct and indirect heat zones. Place a small cast-iron pot on the grill and melt the butter.
Place the steaks directly over the hot coals. Sear for 2–3 minutes, then flip. Baste the steaks with melted butter 2–3 times while searing the second side for another 2–3 minutes.
Move the steaks to the indirect side of the grill. Close the lid and continue cooking, checking the internal temperature every 5–7 minutes. Baste occasionally with additional melted butter.
Drain the cooked potatoes and return them to the pot. Add the butter, sour cream, minced roasted shallot, roasted garlic, chives, pepper, salt, and Asiago cheese. Mash and mix until combined but still slightly chunky.
Remove the steaks when they reach 125–128°F internally for the doneness used in the original recipe.
Let the steaks rest for 8–10 minutes.
Serve the filet mignon with the chunky mashed potatoes and garnish with freshly chopped parsley.
