This Grilled Spatchcock Chicken is seasoned with a sweet and smoky blend of brown sugar, paprika, garlic, and cayenne, then seared over hot charcoal before finishing over indirect heat.
Spatchcock the chicken by cutting out the backbone. Lay the chicken flat and press firmly on the breastbone until it cracks and the chicken lies flat.
Loosen the skin so you can season underneath it.
Coat the chicken with mustard to help the seasoning stick.
Combine the brown sugar, kosher salt, black pepper, smoked paprika, garlic powder, and cayenne.
Season the inside of the chicken, underneath the skin, on the back, and generously over the outside.
Let the seasoned chicken sit for 20 minutes.
Prepare the grill for direct grilling over hot charcoal.
Place the chicken breast-side down over the hot coals and sear for 3–5 minutes. Watch it closely because the brown sugar can burn quickly.
Move the chicken to indirect heat and set the grill to 375°F.
While the chicken cooks, add the mayonnaise, basil, scallions, cilantro, lime juice, garlic, chipotle chile, olive oil, and salt to a food processor. Blend until creamy, then refrigerate until serving.
Continue grilling the chicken until the breast reaches an internal temperature of 165°F.
Remove the chicken from the grill and rest for 5 minutes.
Cut the chicken into portions and serve with the creamy cilantro lime dipping sauce.
