Star off by preparing the chicken wings and seasoning them generously. Once seasoned, wrap with half a strip of thin cut bacon and secure in place with a toothpick.
Fire up the smoker at 250 degrees F, add hickory wood chunks and place the chicken wings on the smoker. Smoke for 40-45 minutes and then begin making the honey bbq sauce.
In a medium saucepan, add all of the ingredients for the honey bbq sauce: ketchup, brown sugar, apple cider vinegar, honey, Worcestershire sauce, kosher salt, garlic powder, onion powder, smoked paprika, red pepper flakes and black pepper. Whisk them for about 6-8 minutes and then cool to room temperature.
Set up the frying station with lard and heat it up to 375 degrees F. Once the chicken wings are smoked to 155 degrees F internally, remove them and fry them in the lard for 3-4 minutes. Fry in batches of 6 and place in a medium/large mixing bowl. Sauce the chicken with the honey BBQ sauce and plate.
