BEST HONEY BBQ CHICKEN WINGS RECIPE
It all starts off with an even portion of flats and drums, I love me some flats but as a chicken wing lover I have learned to appreciate the drums as well. Place the chicken wings in a larger mixing bowl and then season with a simple chicken rub and mix them together.
Once they get the seasoning treatment, get a pack of thin cut bacon and slice the whole package in half. Now, wrap each wing with a single half slice of bacon using a toothpick (soak the toothpicks in water for 20 mins) to hold the bacon in place.
During the preparation process, fire up the smoker to 250 degrees F. Once it reaches the temperature add a few chunks of hickory wood for an elevated smokey flavor. Add the chicken wings to the smoker and smoke for 40-45 minutes and begin to temperature check them at this time. You are wanting to smoke the chicken wings till they reach an internal temperature of 155 degrees F.
HOW TO MAKE HONEY BBQ WINGS SAUCE
While the chicken wings are smoking, begin to make the honey BBQ chicken wings sauce. In a medium sized saucepan add in ketchup, brown sugar, honey, apple cider vinegar, Worcestershire sauce, honey, salt, garlic powder, onion powder, smoked paprika, pepper and red pepper flakes. Place over medium heat and whisk for 6-8 minutes and then let it cool to room temperature.
FRYING CHICKEN WINGS
Right before it is time to remove the chicken wings from the smoker, it is important to have your frying station ready for the next step of this masterpiece dish. Get about 3 pounds of lard in a Dutch Oven and get the lard temperature to 375 degrees.
Remove the chicken wings from the smoker once the chicken wing temps are 155 degrees F. Fry the wings in batches of 6 for 3-4 minutes per batch. Once they are removed from the fryer, place them in a large mixing bowl. Once the whole batch is completed, sauce them with the honey bbq sauce. Plate and serve!
