Instructions
Pat the chicken wings dry and place them in a large mixing bowl.
Add 2 tablespoons olive oil and toss to coat. Season with kosher salt, black pepper, and smoked paprika.
Refrigerate the seasoned wings for 1 hour.
Prepare the grill and grill the mango with the skin on for about 2 minutes per side, or 6–8 minutes total.
Remove the mango from the grill. Remove the skin and pit and set the flesh aside.
Set the grill for indirect cooking at 325°F and add mesquite wood chunks.
Add the wings and cook for 25 minutes, then rotate them.
Meanwhile, heat 2 tablespoons olive oil in a saucepan over medium heat. Add the onion and cook for 2 minutes.
Add the garlic and cook for another 2 minutes. Add the chopped habanero and grilled mango and cook for 4–6 minutes.
Stir in the Worcestershire sauce, rice wine vinegar, and honey. Simmer for another 4–6 minutes.
If the sauce is too thick, add up to ¼ cup water. Transfer to a food processor and blend until smooth.
Continue grilling the wings until they reach about 170°F internally.
Transfer the cooked wings to a large bowl, pour the mango habanero sauce over them, and toss until well coated.
Serve immediately.
