Instructions
Combine the brown sugar, dry mustard, cinnamon, onion powder, garlic powder, turbinado sugar, kosher salt, and black pepper.
Preheat the smoker to 250°F.
If the chuck roast is 3 inches thick or more, cut it in half while it is still chilled.
Coat the chuck roast with mustard and season generously on all sides with the dry rub.
Let the seasoned roast sit for 30 minutes.
Place the chuck roast on the smoker and cook until it reaches 165°F internally, about 3–4 hours.
Remove the roast and place it on aluminum foil. Add 2 tablespoons butter to each piece, wrap tightly, and return it to the smoker.
Continue cooking until the beef reaches 195°F.
Remove from the smoker and rest for 15–20 minutes.
Cut the chuck roast into 1-inch cubes.
Transfer the cubes to an aluminum pan. Add 4 tablespoons butter, 1–1½ cups BBQ sauce, and 3 tablespoons honey. Toss to coat.
Return the pan to the smoker, uncovered, for about 1 hour or until the burnt ends reach approximately 203°F.
Toss once more in the sauce and serve.
