Instructions
Prepare and Season the Wings
Pat the chicken wings completely dry with paper towels. Add the wings to a large bowl with the olive oil, black pepper, Kosher salt, garlic powder and smoked paprika. Toss until evenly coated. Arrange the wings on a wire rack and refrigerate uncovered for 30 minutes before grilling.
Grill Chicken Wings
Preheat your grill for two-zone grilling at medium-high heat (400-425°F). Arrange the seasoned chicken wings in a single layer over the direct heat and grill for 10-12 minutes. Flip and cook for another 10-12 minutes, moving any wings that brown too quickly to the indirect side. Continue cooking until the thickest wings reach an internal temperature of 185-195°F.
Prepare Spicy Garlic Parmesan Sauce
While the chicken wings are grilling, combine the ingredients for the spicy garlic Parmesan sauce in a jar or bowl.
Toss Wings in Sauce
Once wings are grilled on both sides, transfer them to a bowl and pour the sauce over them. Mix well, garnish and serve.
Notes
Pat wings completely dry for crispiest skin.
Add 1 tsp baking powder before seasoning for extra crispiness.
Adjust Sriracha amount based on heat preference.
