Bacon Cheeseburger Sliders

These Bacon Cheeseburger Sliders are the ultimate game day feast. They start with one big griddle-seared beef patty topped with melted sharp cheddar, crispy bacon, and my homemade Smoked Cowboy Candy. I make the patty to fit an entire slab of Hawaiian rolls, so there’s no need to shape and cook a dozen individual burgers.

After making these on the griddle, I found that cooking the bacon first is the way to go. I remove most of the grease, leave just enough behind, and sear the beef right in it. That leftover bacon fat helps build a great crust on the patty while adding even more flavor to the sliders. I use the same bacon-first method for my Candied Bacon Cheeseburger Sliders.

  • 80/20 Ground Beef: I use 80/20 because there’s enough fat to keep the oversized patty juicy while still developing a good crust on the griddle. Make the raw patty slightly larger than the rolls because it will shrink as it cooks. I use a similar one-patty method for my Smoked Baconnaise Sliders with Caramelized Onions.
  • Slider Rolls: Keep the rolls connected instead of separating them. I use the tray as a mold for shaping the beef so the finished patty covers the entire slab.
  • Bacon: Cook the bacon first until it crisp, then remove most of the rendered fat. Leaving a thin layer behind gives you a great surface for searing the beef.
  • Sharp Cheddar Cheese: Sharp cheddar has enough flavor to stand up to the beef, bacon, burger sauce, and sweet heat from the Cowboy Candy while still giving you that melted cheeseburger layer.
  • Burger Seasoning: Use your favorite burger rub and season both sides of the oversized patty. Because we’re cooking one large piece of beef, I want seasoning across the entire surface.

Burger Sauce

  • Mayonnaise: This is the creamy base that brings everything together without overpowering the burger. I use this same creamy mayo-based sauce on my Oklahoma Onion Smash Burgers, where that creamy tang works great with a hard-seared beef crust.
  • Ketchup & Yellow Mustard: These give the sauce that classic cheeseburger flavor with a little sweetness and tang.
  • Sweet Relish: I use sweet relish instead of Cowboy Candy juice here. The sliders already have plenty of sweet heat from the candied jalapeños, and the relish adds pickle flavor and texture without making the sauce overly sweet.
  • Worcestershire Sauce: A little goes a long way. It adds savory depth that works especially well with the griddle-seared beef.
  • Garlic Powder, Smoked Paprika & Black Pepper: These round out the sauce with garlic, mild smoke, and pepper without turning it into another dominant flavor.

Substitutions or Additions

  • Swap the Cheese: Sharp cheddar is my first choice because it stands up to the bacon, beef, and Cowboy Candy, but American cheese is a great substitution if you want an extra-creamy melt. Pepper jack also works if you want to push the heat a little further, like I do with my Smash Burger Recipe.
  • Make Them Milder: Leave off the Smoked Cowboy Candy and add dill pickles instead. You’ll still get acidity to cut through the the rich burger, bacon, and cheese without the jalapeño heat. For another slider without the sweet heat, try my Griddle Cheeseburger Sliders.
  • Add Griddled Onions: Thinly sliced onions can go onto the griddle after the bacon comes off. Let them cook in a little of that rendered bacon fat until browned and soft before adding them to the sliders.
  • Add More Burger Toppings: Diced onion, pickles, or even a little shredded lettuce can work, but don’t overload the sliders. With one large patty and soft Hawaiian rolls, too many wet toppings can make everything harder to slice and eat.

How to Make Bacon Cheeseburger Sliders (Step by Step)

  1. Form and Season the Burger Patty: Press the 80/20 ground beef directly into the Hawaiian roll tray to form one large, even patty. I make the beef slightly larger than the slab of rolls because it will shrink as it cooks. Season the entire surface with burger rub, then carefully remove the patty from the tray and place it in the refrigerator while you crisp the bacon. Keeping the beef cold also makes the oversized patty easier to handle when it’s time to move it onto the griddle.
  1. Set the Griddle Zones and Crisp the Bacon: Set up the griddle with the far-left side off and the right side over medium-high heat. Cook the bacon on the hot side until browned and crispy, flipping as needed. Move the finished bacon to the cool side, then scrape away most of the rendered grease. I leave a thin layer of bacon fat on the hot side because that’s where I’ll be searing the burger patty next. I use the same bacon-first griddle method in my Chicken Bacon Ranch Quesadillas.

  1. Sear the Patty, Flip and Add the Toppings: Place the chilled burger patty onto the medium-high side of the griddle in the thin layer of reserved bacon fat. Let it sear without moving it until a deep brown crust develops on the bottom. Carefully flip the oversized patty using two large spatulas, then continue cooking until the beef reaches 160°F in the center. Once the patty is nearly finished, layer the crispy bacon and sharp cheddar over the beef. Add a small splash of water onto the griddle besides the patty, then cover with a melting dome until the cheddar melts over the crispy bacon and helps hold everything in place.
  1. Make The Burger Sauce: Make the burger sauce while the beef finishes cooking. Add the mayonnaise, ketchup, yellow mustard, sweet relish, Worcestershire sauce, garlic powder, smoked paprika, and black pepper to a bowl. Stir until completely combined and smooth, then set aside until you’re ready to assemble the sliders.

  1. Toast the Hawaiian Rolls: Slice the Hawaiian rolls in half horizontally, keeping the entire slab connected. Place both halves cut-side down on the hot side of the griddle and toast until golden brown. Keep an eye on them because the sweet rolls can toast quickly. Once they’re crisp around the edges and golden across the center, move them to the far-left cool zone until you’re ready to assemble.
  1. Assemble and Finish the Sliders: Spread the burger sauce over the toasted bottom half of the Hawaiian rolls, then carefully transfer the bacon-and-cheddar covered beef patty on top. Spoon the drained Smoked Cowboy Candy evenly across the burger, add the top slab of rolls, and move everything to the far-left off zone of the griddle. Cover with the melting dome for a couple minutes to warm everything through, then remove from the griddle and slice along the roll lines into 12 sliders.

Shape the Patty Slightly Oversized: I use the Hawaiian toll tray as my mold, but I make the beef slightly larger than the rolls. The patty will shrink on the griddle, and starting oversized gives you better coverage from edge to edge.

Keep the Patty Cold: After seasoning, I put the formed patty back in the refrigerator while the bacon cooks. A cold, firm patty is much easier to transfer and flip. without breaking apart.

Save Some Bacon Fat: Don’t scrape the griddle completely clean after cooking the bacon. I remove most of the grease but leave a thin layer behind to sear the beef and build more flavor into the crust.

Use Two Spatulas for the Flip: One oversized patty can be awkward to handle. Get a large spatula under each side and flip it in one controlled motion instead of trying to muscle it over with one.

Steam the Cheese, Not the Burger: Add a small splash of water beside the patty before covering it with the melting dome. The steam melts the cheddar quickly without pouring water directly over your beef, bacon, or cheese.

I prefer 80/20 ground beef for these sliders. The extra fat helps the oversized patty stay juicy while giving you a better crust when it hits the hot griddle. Leaner beef will work, but it won’t cook quite the same.

How do you keep cheeseburger sliders from getting soggy?

Toast the cut sides of the Hawaiian rolls before assembling, and don’t overload them with wet toppings. I also drain the excess glaze from the Smoked Cowboy Candy before adding it. That gives you the flavor without soaking the bottom rolls.
