Rough chopped cilantro

Instructions
Pat the chicken wings dry and place them in a large mixing bowl.
Add the olive oil, lime juice, black pepper, kosher salt, cilantro, garlic, scallions, smoked paprika, and chili powder.
Toss until the wings are evenly coated. Cover and refrigerate for 12–24 hours.
Remove the wings from the refrigerator and pat them dry with paper towels.
Preheat the smoker to 375°F.
Thread the chicken wings onto skewers and place them on the smoker.
Cook for about 30 minutes, then check the internal temperature. Continue cooking until the wings reach 160°F.
Remove the deflector plate and expose the wings to direct heat.
Char the wings for about 60 seconds per side.
Remove the wings from the skewers and serve.
