Cut the salmon lengthwise into 1-inch-thick strips. Cut across the strips to create approximately 1-inch cubes.
Place the salmon cubes in a large mixing bowl. Add the brown sugar, kosher salt, maple syrup, and hot sauce and toss to coat.
Cover and refrigerate for at least 12 hours.
Remove the salmon from the refrigerator and rinse the cure off with cold water. Pat the pieces dry.
Arrange the salmon on a wire rack and let it sit at room temperature for about 1 hour.
Preheat the smoker to 180–200°F using whiskey wood chips or chunks.
Place the salmon bites in the smoker and cook for 3–4 hours.
Near the end of the cooking time, combine the maple syrup, hot sauce, and melted butter.
Brush each salmon bite with the glaze.
Continue smoking for another 20–30 minutes, until the glaze has set.
Remove from the smoker and garnish with sesame seeds and scallions, if desired. Serve with toothpicks.
