What is Cowboy Butter?
Cowboy butter is a savory compound butter that’s packed with flavor. Made with garlic, Dijon mustard, hot sauce, fresh herbs, lemon juice, and spices, it adds a burst of rich taste to everything it touches. It’s not just for steak either—try it on vegetables, chicken, or even as a dipping sauce for bread. Once you try it, you’ll want to put it on everything.
Ingredients:
- 1-2 NY Strip Steaks, cubed 1″ thick
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon garlic powder
- (Optional) 2 teaspoons chili powder
- 1-2 tablespoons avocado oil
- 2 russet potatoes, peeled and cubed into 1/4″ pieces
- 1 white onion, diced
- 1 block unsalted butter, softened
- 3-4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon hot sauce
- 1 tablespoon fresh chopped parsley
- 2 teaspoons fresh thyme
- 2 teaspoons fresh rosemary
- 1 lemon, juiced
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
Instructions:
Prepare the Steaks:
Start by cutting the NY Strip steaks into 1″ thick cubes. Season the steak cubes with salt, pepper, garlic powder, and optionally, chili powder for an added kick. Ensure the seasoning is evenly distributed by tossing the steak cubes in a bowl. Add 1-2 tablespoons of avocado oil to the bowl and mix well to coat the steak bites evenly. Place the seasoned steak cubes in the fridge to marinate for at least 30 minutes to allow the flavors to meld.
Prepare the Potatoes:
While the steak is marinating, peel the russet potatoes and cut them into 1/4″ cubes. Place the potato cubes in a bowl of ice water for 25 minutes. This step helps to remove excess starch from the potatoes, ensuring they become crispy when cooked. After soaking, drain the potatoes and dry them thoroughly with paper towels to remove any moisture. This is a crucial step for achieving perfectly crispy potatoes.
How To Make the Cowboy Butter Compound Butter:
In a medium-sized mixing bowl, combine the softened unsalted butter with minced garlic, Dijon mustard, hot sauce, fresh chopped parsley, fresh thyme, fresh rosemary, lemon juice, kosher salt, black pepper, and red pepper flakes. Mix well until all ingredients are fully incorporated. This compound butter will enhance the flavor of the steak bites and potatoes, adding a rich and savory taste. Place the cowboy butter in the fridge to firm up.
Cook the Steak Bites:
Heat a large skillet over high heat until it is very hot. Add 1 tablespoon of avocado oil to the skillet and swirl to coat. Carefully add the marinated steak bites to the skillet, making sure they are all touching the hot surface. This will ensure a nice sear on each piece. Cook the steak bites for about 90 seconds without moving them, allowing them to develop a good crust. Then, toss or turn each cube individually to sear the other sides. Continue cooking for an additional 2 minutes, tossing occasionally to ensure even cooking. Once the steak bites are browned and cooked to your desired doneness, remove them from the skillet and set aside.
Cook the Potatoes and Onions:
In the same skillet, add another tablespoon of avocado oil. Add the diced potatoes and onions to the skillet, and season with your preferred rub. Toss to coat the potatoes and onions evenly with the seasoning. Cook over medium-high heat, stirring occasionally, until the potatoes are crispy and the onions are soft and caramelized, about 8-10 minutes.
Combine and Serve:
Once the potatoes and onions are cooked, add 1-2 tablespoons of the cowboy butter compound butter to the skillet. Stir until the butter is melted and coats the potatoes and onions, infusing them with its rich flavors. Add the cooked steak bites back into the skillet and toss everything together to combine. Allow the flavors to meld for another minute. Remove the skillet from the heat and let the dish rest for 3-5 minutes before serving to allow the flavors to settle.
