Ingredients:

  1. 1-2 NY Strip Steaks, cubed 1″ thick
  2. 1 tablespoon salt
  3. 1 tablespoon pepper
  4. 1 tablespoon garlic powder
  5. (Optional) 2 teaspoons chili powder
  6. 1-2 tablespoons avocado oil
  7. 2 russet potatoes, peeled and cubed into 1/4″ pieces
  8. 1 white onion, diced
  9. 1 block unsalted butter, softened
  10. 3-4 cloves garlic, minced
  11. 1 tablespoon Dijon mustard
  12. 1 tablespoon hot sauce
  13. 1 tablespoon fresh chopped parsley
  14. 2 teaspoons fresh thyme
  15. 2 teaspoons fresh rosemary
  16. 1 lemon, juiced
  17. 1 teaspoon kosher salt
  18. 1 teaspoon black pepper
  19. 1 teaspoon red pepper flakes

Instructions:

Prepare the Steaks:

Start by cutting the NY Strip steaks into 1″ thick cubes. Season the steak cubes with salt, pepper, garlic powder, and optionally, chili powder for an added kick. Place the seasoned steak cubes in the fridge to marinate for at least 30 minutes to allow the flavors to meld.

Prepare the Potatoes:

While the steak is marinating, peel the russet potatoes and cut them into 1/4″ cubes. Place the potato cubes in a bowl of ice water for 25 minutes. This step helps to remove excess starch from the potatoes, ensuring they become crispy when cooked. After soaking, drain the potatoes and dry them thoroughly with paper towels to remove any moisture. This is a crucial step for achieving perfectly crispy potatoes.

How To Make the Cowboy Butter Compound Butter:
