No-Bake Smoked Mac and Cheese

This No-Bake Smoked Mac and Cheese goes straight on the pellet smoker with dry pasta, whole milk, Velveeta, and four more cheeses. No boiling the noodles and no oven is needed for this recipe. I cooke everything in one pan, stirring as the pasta cooks directly in the cheese sauce, then finish it with Oaxaca for a big cheese pull right off the smoker.

My family loves Mac and Cheese, and I have a few different ways I like to make it. My Steak Bites Loaded Mac and Cheese gets topped with perfectly seared steak bites for a heartier version. For a more traditional approach, my Mac and Cheese recipe uses a homemade cheese sauce.

Quick Look: No-Bake Smoked Mac and Cheese

  • What it is: A one-pan smoked mac and cheese where the dry pasta cooks directly in whole milk and five cheeses on the pellet smoker, no boiling and no oven needed.
  • Why Make THIS Version? I cook everything together instead of boiling the noodles or making a separate cheese sauce. I stir the mac twice as it cooks, then finish it with Oaxaca for a melted top and a big cheese pull.
  • Key Ingredients: Elbow noodles, whole milk, Velveeta, sharp cheddar, Monterey Jack, cream cheese, Oaxaca, butter, and seasonings.
  • Cooking Method: Pellet smoked uncovered at 350°F for 30 minutes, stirred, cooked another 30 minutes, then topped with the reserved cheese and finished for 10-15 minutes.
  • Total Time: About 1 hour, 35 minutes including prep and resting time.
  • Pairs Well With: Fries, baked beans, potato salad, a side salad, etc.

Why This Recipe

  • No Boiling the Pasta: The dry pasta cooks directly in the whole milk and cheese on the pellet smoker, so there’s no separate pot of water or cheese sauce to make. If you want another recipe that keeps the prep simple, try my Pellet Smoked Pizza Breadsticks next.
  • Two Stirs Matter: Stirring at 30 minutes redistributes the noodles through the hot liquid, while the second stir at 60 minutes lets me check the pasta and sauce before adding the final layer of cheese.
  • Five Cheeses With a Purpose: Velveeta builds the smooth base, sharp cheddar brings the flavor, Monterey Jack adds melt, cream cheese gives the sauce body, and Oaxaca gives me the stretch I want on top. If you’re looking for more cheese-loaded recipes from the smoker, try my Easy Smoked Chorizo Queso or Chicken Bacon Ranch Smoked Queso.
  • Blend the Melting Cheese: I mix the Oaxaca with sharp cheddar and Monterey Jack before adding it to the pan. This spreads the three cheeses more evenly throughout the mac instead of leaving pockets of one cheese in different areas.

For the No-Bake Smoked Mac and Cheese

  • Elbow Noodles: The pasta noodles go straight from the box into the pan without pre-boiling it first. The noodles cook directly in the whole milk and cheese mixture on the pellet smoker, so the amount of liquid matters with this method.
  • Velveeta Cheese: Velveeta gives me the smooth base I want as everything melts together. I cut it into chunks so it spreads throughout the pan easier once it starts heating up. For another recipe with a smooth-melting base my Smoked Queso with Steak Bites recipe is perfect, the Velveeta helps keep the queso creamy as it smokes.
  • Sharp Cheddar, Monterey Jack & Oaxaca: I shred these cheeses from the block and mix them together before adding them. Sharp cheddar brings more flavor, Monterey Jack melts smoothly, and Oaxaca adds the stretch I want when I scoop into the finished mac.
  • Cream Cheese: Cream cheese to add some extra body and richness to the sauce without relying on more Velveeta.
  • Whole Milk: The milk is essential because it’s doing double duty. It loosens the cheese mixture while also providing the liquid the dry noodles need to cook directly on the smoker.
  • Cajun Seasoning, Garlic Powder & Chili Powder: This combination gives the cheese sauce more depth and a little heat. The Cajun seasoning does most of the heavy lifting, while the garlic and chili powder round out the flavor. This same seasoning profile is used in my Smoked Hot Honey Chicken Wings, where it builds a flavor base before the wings are finished with sauce.

Substitutions or Additions

  • Switch the Pasta: Cavatappi is my first choice if you don’t want to use elbow noodles. The twists and ridges hold plenty of the cheese sauce, but I would stick with a similar sized pasta so the cook time and liquid needs stay close to what I tested.
  • Add Some Meat: Fold in chopped bacon, smoked sausage, pulled pork, or shredded beef ribs to make this mac even heartier. My Beef Rib Mac and Cheese is a good example of how I use shredded beef ribs with a cheese-heavy mac.
  • Turn Up the Heat: Swap some of the Monterey Jack for Pepper Jack or add a little more hot sauce. I wouldn’t change the amount of milk because the dry noodles need that liquid to cook. If you want another cheesy recipe with some heat, try my Buffalo Chicken Dip.
  • Change the Cheese Blend: Smoked Gouda can replace part of the sharp cheddar or Monterey Jack if you want a stronger smoke flavor. I would keep the Velveeta for the smooth base and the Oaxaca for the stretch.

How to Make No-Bake Smoked Mac and Cheese (Step by Step)

No-Bake Smoked Mac and Cheese ingredients assembled in a pan before smoking

  1. Build the Mac and Cheese: Add the dry elbow noodles to a large aluminum pan, then add the cubed Velveeta, cream cheese, butter, and shredded cheese mixture. Season with Cajun seasoning, garlic powder, and chili powder, then add the hot sauce and pour in the whole milk. Spread the noodles evenly across the bottom of the pan before adding the milk so they stay in contact with the liquid and cook evenly.
  1. Preheat the Smoker and Start Cooking: Preheat the pellet smoker to 350°F and let it come completely up to temperature. Place the pan on the smoker uncovered and cook for 30 minutes. I keep the pan uncovered throughout the cook so it can pick up smoke while the milk heats, the cheese begins to melt, and the dry noodles start to soften. 1. Stir After 30 Minutes: Remove the pan from the smoker and stir everything thoroughly, making sure to scrape across the bottom and corners of the pan to keep the noodles from burning and sticking. The cheese should be melted into the milk and the noodles should be starting to soften, but they won’t be fully cooked yet. Work any noodles sitting above the sauce back into the liquid, then return the pan to the smoker at 350°F for another 30 minutes.
  1. Add the Cheese and Finish Smoking: After the second 30-minute cook, remove the pan from the smoker and give the mac another thorough stir. Taste the noodle to make sure it’s tender, then spread the remaining shredded sharp cheese, Monterey Jack, and Oaxaca evenly across the top. Return the pan to the smoker at 350°F for 10-15 minutes, or until the cheese is completely melted and the sauce is bubbling around the edges.

  1. Check for Doneness and Remove: After the final 10-15 minutes, check the mac and cheese before pulling it from the smoker. The cheese on top should be completely melted with some light browning, the sauce should be bubbling around the edges, and the noodles should be tender. Once I have those three things, I pull the pan from the smoker so the mac doesn’t continue cooking and lose too much moisture.
  1. Rest and Serve: Remove the mac and cheese from the smoker and let it rest for 5 minutes before serving. The sauce will thicken slightly as it rests and cling to the noodles while the cheese stays hot and melted. Spoon it into a bowl and serve while everything is still warm and gooey. The rich cheese sauce makes this a good side for something smoky or grilled. I like pairing it with my BBQ Party Ribs , or for a chicken dinner, my Spatchcocked Smoked Chicken.

James’ Grill Master Pro Tips

Keep the Noodles in the Liquid: Spread the dry noodles evenly across the pan and make sure they stay in contact with the milk. Any noodles sitting above the liquid won’t soften at the same rate.

Don’t Skip the 30-Minute Stir: Scrape the bottom and corners of the pan and work any exposed noodles back into the sauce. This helps the pasta cook evenly and keeps it from sticking.

Freshly Shred Your Cheese: I shred the sharp cheddar, Monterey Jack, and Oaxaca straight from the block. They melt more evenly and give the finished mac a smoother texture and better cheese pull. I use freshly shredded cheese in my Chili Lime Steak Quesadillas too, where getting a smooth melt helps hold the steak and filling together.

Use the Final Cheese Layer as the Finish: Save part of the sharp cheddar, Monterey Jack, and Oaxaca mixture for the last 10-15 minutes. This gives you a melted, golden top without having to overcook the noodles.

Check the Sauce at 60 Minutes: The noodles should be close to tender and the sauce should still have some movement. If the pasta needs more time but the sauce is getting too thick, add a small splash of warm whole milk before the final cook.

Let It Rest for 5 Minutes: The sauce will still look slightly loose when the mac first comes off the smoker. Give it 5 minutes to tighten around the noodles while the cheese stays hot and melted.

No-Bake Smoked Mac and Cheese FAQs

Do you have to boil the noodles before making smoked mac and cheese?

No. For this recipe, the elbow noodles go into the pan completely dry and cook directly in the whole milk and cheese mixture on the pellet smoker. Keeping the noodles in contact with the liquid and stirring during the cook helps them soften evenly.

How long does no-bake smoked mac and cheese take on the smoker?

At 350°F, plan on about 70-75 minutes of cooking time. Smoke it for 30 minutes, stir, cook another 30 minutes, then add the final layer of shredded cheese and smoke for another 10-15 minutes. Let it rest for 5 minutes before serving.

Why is my smoked mac and cheese getting too thick?

The dry pasta continues absorbing liquid as it cooks. Check the consistency during the 60-minute stir. If the noodles still need more time but the sauce is already getting thick, stir in a small splash of warm whole milk before adding the final cheese layer.

What are the best wood pellets for smoked mac and cheese?

I prefer a milder wood or balanced blend so the smoke doesn’t overpower the cheese. Apple, cherry, pecan, or a competition-style blend all work well with this recipe.

Equipment

  • Pellet Smoker
  • Large Aluminum Pan
  • Box Grater
  • Large Spoon or Spatula

Ingredients

No-Bake Mac and Cheese

  • 16 oz elbow macaroni uncooked
  • 16 oz Velveeta cheese cut into cubes
  • 8 oz sharp cheddar cheese freshly shredded
  • 8 oz Monterey Jack cheese freshly shredded
  • 6 oz Oaxaca cheese freshly shredded
  • 4 oz cream cheese cubed
  • 4 cups whole milk plus more if needed
  • 4 tbsp Unsalted Butter cut into pieces
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 tsp Cajun seasoning
  • 1 tbsp Hot sauce

Instructions

Build the Mac and Cheese

  • Add the dry elbow noodles to a large aluminum pan. Add the cubed Velveeta, cream cheese, butter, and part of the shredded sharp cheddar, Monterey Jack, and Oaxaca mixture, reserving the rest for the final cheese layer. Add the Cajun seasoning, garlic powder, chili powder, and hot sauce, then pour in the whole milk. Spread the noodles evenly across the bottom so they stay in contact with the liquid.

Smoke for 30 Minutes

  • Preheat the pellet smoker to 350°F. Place the pan on the smoker uncovered and cook for 30 minutes.

Stir and Continue Smoking

  • Remove the pan from the smoker and stir thoroughly, scraping the bottom and corners to prevent sticking. Work any noodles sitting above the sauce back into the liquid. Return the pan to the smoker, uncovered, at 350°F for another 30 minutes.

Check the Pasta and Add the Cheese

  • After the second 30-minute cook, remove the pan and stir again. Taste a noodle to check for doneness. It should be tender or very close. If the sauce is getting too thick before the pasta is finished, stir in a small splash of warm whole milk. Spread the reserved sharp cheddar, Monterey Jack, and Oaxaca mixture evenly over the top.

Finish Smoking

  • Return the pan to the smoker at 350°F for 10-15 minutes, uncovered. Cook until the cheese is completely melted with some light browning, the sauce is bubbling around the edges, and the noodles are tender.

Rest and Serve

  • Remove the mac and cheese from the smoker and let it rest for 5 minutes. The sauce will tighten slightly around the noodles as it rests. Serve while the cheese is still hot and melted.

Notes

  • Do not boil the pasta first. This recipe is designed for dry elbow noodles to cook directly in the milk and cheese mixture.
  • Keep the noodles in the liquid. Spread them evenly across the pan and work any exposed noodles back into the sauce during each stir.
  • Check the consistency at 60 minutes. If the noodles still need more time but the sauce is getting too thick, stir in a small splash of warm whole milk before the final cook.
  • Shred the cheese from the block. Freshly shredded sharp cheddar, Monterey Jack, and Oaxaca melt more evenly than pre-shredded cheese.
  • Use the pasta, not just the clock, to judge doneness. Pellet smokers can cook a little differently. The noodles should be tender and the sauce bubbling before you pull the pan.
  • Rest for 5 minutes before serving. The sauce will tighten around the noodles as it sits.
