Instructions:
To begin, coat the chuck roast with mustard to help the BBQ rub adhere better.
Season the roast generously with your chosen rub and let it rest. Meanwhile, heat your smoker to 250 degrees, adding hickory wood chunks for smoke. Place the roast inside and start the cooking process.
After the first 45-50 minutes, spritz the roast with apple cider vinegar every 30-40 minutes, continuing until it reaches an internal temperature of 165 degrees, approximately 3 hours in total.
Next, prepare the onions and garlic by chopping and mincing, respectively, and place them in an aluminum pan. Add the smoked chuck roast to this pan along with beef broth and additional apple cider vinegar.
Cover with foil and return to the smoker until the meat is tender to the probe. Allow it to rest for 30-45 minutes after removing it from the smoker.
While the meat rests, toast the King’s Hawaiian rolls to bring out their inherent sweetness and add texture. Shred the rested meat, keeping it separate from the cooking liquids.
Construct the sliders by layering the rolls with slices of pepper jack cheese, a heap of the shredded beef, a drizzle of BBQ sauce, and a sprinkle of shredded cheddar cheese.
Finish by placing the top half of the rolls on and bake at 415 degrees for 12-15 minutes, until the cheese is bubbling. Serve hot, with the cooking liquid on the side for dipping.

- Favorite BBQ rub
- Apple cider vinegar for spritzing and additional 1/4 cup
- 3 large onions chopped
- 5 cloves garlic minced
- 2 cups beef broth
- King's Hawaiian sweet rolls
- 6 slices pepper jack cheese
- BBQ sauce
- Shredded cheddar cheese
- Hickory wood chunks for the smoker
